Baked Fish in a Bag

  • 2 large salmon fillets 
  • 3 cm length of ginger, finely sliced 
  • 3 kaffir lime leaves, crushed 
  • 1 kalamsi lime 
  • 1 teaspoon of sesame oil 
  • 2 tablespoons soy sauce
  1. Preheat oven to 180 degrees celcius
  2. Tear off a large piece of aluminium foil and place it on to your baking tray. Place the salmon fillets on to the centre of the aluminium foil. Crush the kaffir lime leaves and scatter them on top of the salmon. Do the same with the finely slice ginger. Drizzle the soy sauce and sesame oil over the salmon. Squeeze the juice of the kalamansi lime over the salmon.
  3. Fold the aluminium foil over, leaving a border of 5 cm around the fish along the three sides. Fold the left edge over twice, followed by folding over twice the top edge and repeating it for the right vertical edge. Place your bag into the preheated oven and cook for 20 minutes.
  4. Remove from oven, open the bag, taking care to save the cooking juices from the bag and serve with a garnish of spring onions.
