Recipe

Sesame Udon Noodles

Ingredients:

  • Japanese Udon, 1 Pack
  • Broccoli
  • Carrot, 1 Cup (cut into matchsticks)
  • Eggplant
  • Mushrooms
  • Kewpie Roasted Sesame Dressing

Garnishing Ingredients (Optional):

  • Lime, Sliced into wedges
  • Chillies, Sliced
  • Ground Nuts, sprinkle

Directions:

  1. Cook udon according to package directions. Drain and set aside.
  2. SautΓ© vegetables lightly.
  3. In a large serving bowl, combine the cooked udon, carrots, broccoli and mushrooms and eggplant. Pour dressing over the vegetables and toss to coat.
  4. Serve with a squeeze of lime.
  5. Chillies and ground nuts are optional if you want to add a dash of excitement.

Goodness Salad with Honey Glaze

Glazing Ingredients:

  • Honey, 1/8 cup
  • Freshly squeezed orange juice, 1 tablespoon
  • Freshly squeezed lemon juice, 1 tablespoon

Salad Ingredients:

  • Strawberries, 1 pack
  • Blueberries, 2 packs
  • Pineapple, 1/2 cut into chunks
  • Bananas, 2 whole cut into cubes
  • Pears, 1 cut into cubes
  • Apples, 1 cut into cubes
  • Mandarin oranges, 6 pieces (skin removed & use as wedges)

Directions:

  1. In a big bowl mix all the fruits & toss with honey glaze.
  2. Keep in the fridge for at least 30 minutes and serve chill.

Garlic Parmesan Baked Carrot Fries

Ingredients:

  • Carrots, 2 sticks
  • Garlic Powder, 1 tablespoon
  • Chopped Garlic, 1 tablespoon
  • Fresh parsley, quarter cup
  • Pepper, 2 tablespoon
  • Salt, half teaspoon
  • Olive Oil, 1 tablespoon
  • Parmesan Cheese, quarter cup

Directions:

  1. Cut carrot into sticks.
  2. Add garlic powder, fresh garlic, salt, pepper, parmesan cheese, parsley, oil and bake at 200 degrees Celsius for 15-20 mins.
  3. Toss and serve.
