Chilled Black Glutinous Rice With Brown Sugar Frilled Bananas, Sago and Vanilla Ice Cream

Serves: 4

Ingredients
80g Black Glutinous Rice, washed and drain
30g White Glutinous Rice, washed and drain
700ml Water
50g Honey Rock Sugar Comb
40g Pandan Sago Pearls
2pcs Local Bananas
2tbsps Fine Sugar
Vanilla or Coconut Ice Cream



Preparation Method
1. Combine both glutinous rice in a pot and add water. Bring to boil and simmer for 30 mins until grains are soft and starchy, add the rock sugar comb and stir frequently. Set aside to cool.
2. In another pot of water, boil pandan sago pearls for 15-20 mins until they turn transparent, stirring frequently to prevent them from lumping together.
3. In a baking tray, peel the banana and split into half lengthways Cut the split bananas into half and sprinkle on the sugar. Broil in a hot oven at 200C for 5mins or use a blowtorch to fire torch the bananas till sugar is caramelised.
4. Divide the chilled glutinous rice into four serving plates. Add a piece of the cooked banana to each plate and a scoop of ice cream by the side. Top up with cooked sago pearls and serve.
