Chilled Pork Shabu Shabu with Spinach & Roasted Sesame Salad Dressing

200g Malaysia Sharp Spinach, trimmed
200g Frozen Pork Shabu Shabu, defrosted
100ml Kewpie Roasted Sesame Dressing
1 Century Egg, peeled and sliced (Optional)
1tbsp Sesame Seeds, toasted
1tbsp Wolfberries, soaked in Shaoxing Wine
Pork Floss for garnish

Preparation Method
1. Bring a large pot of water to boil. Blanch the spinach leaves for 10 seconds and refresh in cold water. Drain and transfer to a serving dish.

2. Blanch the shabu shabu pork slices in the same pot of water and refresh with cold water. Drain and set on top of the blanched spinach.

3. Drizzle roasted sesame dressing over the pork and spinach. Add the diced century egg, sesame seeds, wolfberries and garnish with pork floss before serving.
